Arbequina Olve OilArbequina olives grown in Spain are small, have a large pit that is very difficult to remove and are wonderfully delicious. This variety won the European Olive Oil competition during the early 2000's and we have been using it as our one non infused flavored oil for over seven years. It doesn't have a lot of olive flavor like the California olives do and that's why I like it. for those who would like to make a balsamic vinaigrette, this olve oil won't overwhelm or compete with the balsamic. Basil Olive OilDried basil is infused into Italian olive oil until iit becomes strong enough to become a Tres Classique flavor. Cook your favorite pasta, add some sauteed vegetables and finish with Basil Olive Oil. Meyer Lemon Olive OilItalian Olives and Meyer lemons are pressed at the same time so that the oil from each food will blend together. The entire pressing is put into a centrifuge and spun until the juices and oils have separated. Meyer Lemon oil is born. Use to cook vegetables at low heat, pour over salads, use on any seafood either before, during or after cooking. I like to mix a tablespoon of Lemon Oil with 2 tablespoons of mayo. Spread the mixture over a piece of salmon or chicken and bake. Your food will be super moist and delicious. The lemon mayo mix can also be used to top steamed asparagus or for artichoke dipping. Roasted Garlic Olive OilGarlic from Gilroy, CA is roasted and then infused into an extra virgin olive oil from Italy. Add to any dish that you desire to have the flavor of the "stinking rose". One of my favorite dishes........small cubes of raw, red potatoes mixed with Garlic Oil and spread on a cookie sheet. Chopped fresh rosemary sprinkled on top and baked at 375 for 45 min till tender. Season as desired and serve. A little Haberrano Balsamic as a finishing sauce would be very nice. Speaking of a hot balsamic, mix equal parts of Garlic Oil and our Blazin Balsamic together for a dipping oil with a nice kick. You'll dazzle your friends with new found culinary skills! Velencia Rice Bran Oil (telephone orders only)Pure Valencia Orange oil is blended with heart, healthy rice bran oil. We use this flavor to make the Valencia Splash. One of our customers made some brownies and substituted one half of the vegetable oil with the orange oil and she said the orange flavor came through beautifully. Brush on baked chicken, grilled vegetables or add to a salad. Mix a little with mayo to make an orange aoli. Spread the orange aoli on fish or chicken and bake. We offer 3 sizes; 1.6 oz for $10.00, 5oz for $25.00, and 8.4oz for $40.00. The white truffles we use are from Alba, Italy. The most recent price for frest white truffles are $2,200 dollars per pound. Common uses include; mash Photatos, mixed into pasta, sprinkled over vegetables, blended into cream soups, and sauces. Never use as a saute oil. Once truffle oil hits the smoking point of 250 degrees the truffle flavor will burn out. Always use truffle oil as a finishing oil. Keep the lid on in a dark cool cupboard.
